How to prepare vegetable rice in an electric cooker?

Vegetable rice is one of the most common and regular recipes in everyone's food chart. It is not only healthy but also tasty and handy.

For those who are staying as a Paying Guest or in a flat without proper cooking accessibility and resources, here I put a full stop to all your problems now.

Where there is a will there is way. So, just chill and follow our way!!

Vegetable rice can be prepared very easily in an electric cooker in not more than 20 minutes.

Lets us now switch on to the preparation of healthy, tasty vegetable rice using less ingredients and resources.. 






All you need is:      
              
(Required)
1. Rice – 1 cup
2. Water- 2 cups
3. Seasonings (mustard seeds, cumin, cloves, cinnamon)
4. Ginger paste/ finely chopped ginger (1 tsp)
5. Oil (it can be replaced with butter for softer texture)
6. Vegetables (onion, tomatoes, capsicum, green chillies, beans, carrot etc..)
7. Salt and pepper powder.(sufficient amount)

(Optional)
1. Lemon
2. Mint leaves
3. Coriander leaves


Preparation:

1. Heat oil/butter (preferably ground nut oil) in an electric cooker for 1 min.
2. Add 2 cloves and sufficient cinnamon and stir for 30 seconds.
3. Add mustard and cumin seeds to the oil and fry it till you hear crackling sound of mustard seeds
4. Add very little ginger paste followed by chopped green chillies and allow it to fry by stirring.
5. Add chopped onions and wait until color changes to slight brown. (don't over fry)
6. Add carrot, capsicum and other required vegetables and stir it for 2 minutes.
7. Add tomatoes at the end. (Make sure that tomatoes are slight juicy and finely chopped.)
(* you can also add some tomato sauce for lubrication)
8. After few seconds add 2 cups of water and allow it to boil.
9. Add sufficient salt and pepper (add pepper only if you require)
10. Add 1 cup of cleaned rice and allow it to boil for sometime until the electric cooker automatically turns off.
11. Squeeze lemon juice if required before serving to add additional taste.
12. Garnish with mint and coriander leaves for better appearance.
13. Your scrumptious vegetable rice is now ready to serve hot. (Serve with raitha or plain curd).
